Last thoughts of summer...
I am having a hard time dealing with these last summer days, the first turning tree was spotted today. In memory of all our good times these past few months, here is the recipe for Cucumber and Watermelon Salad. Our favorite new dish, this salad is cool and crisp, the perfect accompaniment to barbecued hamburgers, pressed salami sandwiches, and many other things.
Cucumber and Watermelon Salad:
3 cups peeled and cubed English (or seedless) cucumber
3 cups cubed seedless watermelon
3 tbsp. fresh lime juice
coarse salt and ground pepper
In a large bowl, toss cucumber and watermelon with lime juice, 3/4 tsp. salt and 1/8 tsp. pepper. Serve immediately.
*if not serving immediately, leave out the salt. Just before serving, toss with salt.
Lauren once added lime zest to this, which was quite tasty, and Viki suggested using fresh mint, which also sounds delicious.

oh, so delicious! that was like the best food week ever.
I took this salad to the End of summer Jazzercise party last weekend. I was going to write about the event, but in the end I thought it too strange and did not think I could capture it accurately in words. I am happy to report that no actual Jazzzercising took place, AND we have a new routine set to Feel Good Inc. by Gorillaz. I AM SO HAPPY!!!!
